Science Fair Project

Science fair projects do actually help "teach" science by having us conduct experiments in which we learn the processes of something new.  When we do science fair projects, we learn from them by doing them.  Certain projects, you learn while you're doing your experiment.  Sometimes, science fair projects don't really "teach" you anything.  If you're doing an experiment where you already know the results, you won't learn anything from doing it.  Learning only applies to science fair projects when you are doing something completely new that you have no idea what the results would be.  Doing something that you already know isn't really conducting an experiment where the outcome is unpredictable to you.

I agree with most of what you said but here is another viewpoint...If you are doing the same project you started in the 4th or 5th grade, the expectation is that it will keep getting better and better... hence, you’re learning new material to make it better. Your science vocabulary improves, your research skills develop, and who knows you may end up being the next Nobel Prize winning scientist.
